Our Top 4 Snacks for Nut Lovers

Nuts get a bad rep sometimes and we are constantly told “I hear nuts are really fatty”. Absolutely you are correct, but they are also a great source of ‘good fats’ (mono- unsaturated fatty acids which promote an increase in HDL (good) cholesterol and helps to reduce LDL (BAD  cholesterol)). Nuts are also a source of protein – and for those who don’t eat meat or dairy they are a great source. Just be careful of the portion size, because although packed full of great things, they’re calorie heavy. 

1. STUFFED DATES

Serves: 5 (have one a snack portion – add what you need to fill the snack out if necessary)
Diet preferences: Vegetarian, Egg free

Ingredients

  • 5 pitted dates
  • 80g melted 70% chocolate
  • 2tbsp smooth almond butter (we used coconut and almond butter)
  • 2tsp desiccated coconut 

Method:

  • Using a food syringe (or a steady hand and a spoon!?) inject the smooth almond butter.
  • Cover in melted dark chocolate 
  • Sprinkle desiccated on top
  • Keep in the fridge

2. MARMITE CASHEWS

Diet preferences: Vegetarian, Egg free
  • Simply mix together 1tbsp marmite with 2tbsp water.
  • Mix the cashews together with the marmite mix and add a pinch of black pepper.
  • Empty nuts into a baking tray and roast for 12-15minutes until fragrant golden and sticky!
  • A portion is the size of a golf ball, pair with a piece of fruit of veg to make a complete snack!

3. THE ABSOLUTE CLASSIC ON-THE-GO

Diet preferences: Vegetarian, Egg free

Absolute classic and handbag friendly.

  • Simply grab a sachet of pip’n’nut peanut butter and a crunch Braeburn apple.
  • Could not be simpler! 

4. PEANUT COOKIES

Serves: 15
Diet preferences: Vegetarian, Egg free

Ingredients:

  • 1 American cup of smooth peanut butter,
  • 2tbsp maple syrup,
  • 1 egg,
  • 3tbsp ground oats,
  • 1tsp vanilla extract,
  • 2tbsp coconut flour,
  • 1tsp coconut oil. 

Method:

  • Mix all ingredients together til you make a stiff dough.
  • Split the dough and make 15 small balls.
  • Flatten the balls to make circular rounds.
  • Bake on a non-stick baking tray at 180’C for 8-10 minutes.
