Healthy BBQ Sides – Tahini, Beetroot, Kale

BBQ season is upon us! So, why not add some delicious side dishes that are just that little bit healthier to keep your nutrition on point.

YOGHURT AND TAHINI SAUCE (great for salads)

Ingredients:

  • 200g low fat yoghurt
  • 2 tsp tahini
  • Lime juice to taste

Method:

  1. Whisk the yoghurt, tahini and lime in a bowl
  2. Enjoy!

BEETROOT DIP (great for snacks)

Ingredients:

  • 1/2 small beetroot (peeled and grated)
  • Pinch of ground cumin
  • Pinch of ground coriander
  • Lemon juice to taste
  • 100g low fat yoghurt

Method:

  1. Place all ingredients into a small bowl and mix until well combined
  2. Enjoy with vegetables as a snack

KALE CHIPS

Ingredients:

  • 1 bunch kale
  • 1 tsp olive oil
  • 1/4 tsp sea salt (optional)

Method:

  1. Preheat oven to 350 º F
  2. Wash kale and remove tough stems
  3. Cut kale into 2-3inch sections and place on baking sheet
  4. Drizzle with olive oil and sprinkle with sea salt, if desired
  5. Toss kale to fully coat with oil
  6. Bake for 10-15 minutes, or until kale is crispy
  7. Serve hot or cold

COCONUT CREAMED KALE

Ingredients:

  • 1 tsp coconut oil for cooking
  • 1 medium garlic clove (crushed)
  • 1 large sweet onion (chopped)
  • 3 large handfuls of kale
  • 1/8 tsp ground white pepper
  • Pinch of nutmeg
  • 120ml unsweetened coconut milk
  • Salt and pepper to taste

Method:

  1. Heat a large skillet over medium heat. Once hot, add in coconut oil
  2. Add garlic and onion, sauté for 5-6 minutes until softened
  3. Add kale and cook for 2-3 minutes
  4. Add in salt, white pepper, nutmeg and coconut milk
  5. Cook stirring frequently for another 5 minutes until the kale is soft and coconut milk is thickened
  6. Taste and adjust the seasoning
