Salmon Cakes

If you’ve been meaning to make changes to your nutrition, but can never seem to find the time – one thing that will always help is meal prep!

That quote “fail to prepare, prepare to fail” flies around health and nutrition and circles and I know it sounds a bit harsh but it is SO true, especially when it comes to preparing your meals.

SO WHAT IS MEAL PREP? Meal prep can mean different things to each person, so it is important you find a routine that works for you. But the end goal should be that it saves you time in the kitchen and makes it easier for you to eat more healthily during the week.

Here’s a tasty recipe for lunch or dinner, easy to prep, can be frozen and is healthy (of course!)…

SALMON CAKES (+ choice of side)

Ingredients:

  • 100g Salmon (cooked)
  • 2 free-range eggs
  • 2 spring onions chopped
  • 1 garlic clove or 1/4 tsp of lazy garlic
  • Grated ginger (to your taste)
  • 1.5 tsp lemon juice
  • 1/4 tsp cumin
  • Sea Salt
  • Black Pepper

Method:

  1. Preheat the oven to 180℃
  2. Line a baking tray with baking paper or coconut oil
  3. Combine the ingredients
  4. Make patties and place on the lined baking tray
  5. Bake for 20 minutes
  6. Can be eaten immediately or stored in the fridge a few days. You may add vegetables, salad or carbs to complete the meal when you are ready
